Man Fu Yuan x Irish Duck Company Present: The Best of Irish Showcase

From 1 October to 15 November, InterContinental Singapore’s Michelin-recommended Cantonese restaurant, Man Fu Yuan, and Irish Duck Company will showcase three 6-course menus, each showcasing some of the finest produce Ireland has to offer. Together, they will be presenting an exceptional dining experience that brings the best of Irish produce to Singapore, reared in the country’s vast countryside, and we were elated to be invited to try this amazing partnership first-hand!

This cuisine partnership was born out of Executive Chinese Chef Aaron Tan’s unwavering commitment to excellence in his relentless pursuit of the finest ingredients. From the highly acclaimed “8-Hands” collaboration with celebrated Chefs Pang Lu Tin, Fok Wing Tin, and Peter Tsang, where they reimagined classics from the 70s and 80s to this celebration of Irish produce Man Fu Yuan consistently explores innovative avenues to elevate its cuisine.

Irish Duck Company, the exclusive distributor of the world-famous Silver Hill Duck in Asia, is renowned for providing the “wagyu of duck” to fine-dining establishments and luxury hotels globally. Ireland, known for its exceptional agricultural practices, boasts some of the world’s finest produce due to its pristine land, abundant water resources, and advanced farming techniques. The partnership aims to promote Irish meat and produce in the country with the support of the Irish Government.

A great addition to the Irish Duck Company is the exquisite John Stone Dry-Aged Beef and Hampshire Pork. They will be making their debut in Singapore through Chef Aaron Tan’s three meticulous set menus, each representing an opulent celebration of Irish cuisine.

The Gracious Set Menu offers a grand 6-course experience for 3 to 5 persons, priced at $298++ per person. The feast begins with appetizers that include John Stone Irish smoked salmon with caviar, pan-seared foie gras with rice cracker and mixed berries sauce, and wok-fried minced John Stone Irish lamb with a cumin golden cup. Delight in the seafood course, which features braised South Africa 18-head dried abalone paired with roasted Silver Hill Irish Duck. We personally loved the smoked salmon due to the freshness of the meat, making it so easy for us to enjoy the dish!

The beef course offers smoked-seared John Stone Dry-Aged beef tenderloin with a rich red wine sauce. Concluding the meal on a sweet note with a chilled honey rock sugar bird’s nest with egg white and water chestnuts.

The Treasure Set Menu

The Treasure Set Menu, a 6-course culinary journey designed for 3 to 5 persons, is priced at $138++ per person. The course features John Stone Irish lamb cubes with Sichuan spices alongside double-boiled superior soup with Irish Hampshire pork, and water chestnut meatballs. The star of the show is the roasted-smoked Silver Hill Irish Duck with truffle sauce.

The lamb cubes were one of my most memorable dishes as I personally do not take lamb due to its gameness. However, this dish totally changed my mind regarding lamb meat as I could taste the full flavour of the Sichuan pepper with ZERO gaminess from the lamb meat itself. It was definitely a surprising and delightful experience for me.

Elegant Set Menu

The Elegant Set Menu, which is ideal for 3 to 5 persons, is priced at $228++ per person. The menu takes you on a gastronomic journey through a braised golden bird’s nest with golden pumpkin superior stock for the soup course, followed by wok-fried John Stone Irish lamb loin with Sarawak black pepper sauce and Hong Kong kai lan. Revel in the delectable braised Irish Hampshire pork belly with South Africa 5-head abalone. The menu culminates with the luscious La Mian with Rock lobster with Silver Hill Irish Duck in XO sauce.

 

The golden pumpkin soup was extremely comforting and fragrant due to the long hours of cooking. I could taste the richness in the stock with an added texture from the bird’s nest. I personally highly recommend it to all my soup fanatics!
