Introducing Janice Wong

 

Chef Janice Wong, a native Singaporean, fell in love with culinary arts by chance during one of the farm trips in Melbourne, Australia. She has been continuously pursuing the best of the best in chocolate and pastry making, learning from the world’s best chefs such as Thomas Keller, Grant Achatz, Spanish chocolatier Oriol Balaguer and French pastry Chef Pierre Herme.

Janice Wong Pure Imagination was established in 2014 that provides a wide range of confectionery products which include custom made chocolate bon bons, cakes and ice cream. Her concept is to create every dessert into a design.

Chef Janice Wong has received worldwide recognition for her cutting-edge creations. She was named Asia’s Best Pastry Chef for 2013 & 2014. She has also won the title of Pastry Chef of the Year from World Gourmet Summit Awards in 2011, 2013 and 2015, including Young Woman of the Year from Her World in 2012.

With so many awards to her name, Janice continues to excel, crafting new desserts that are both a feast for the eyes and a delight for the taste buds. With the Mid-Autumn Festival just around the corner, it’s the perfect opportunity for her to showcase her talent and present mooncakes in a fresh and innovative way.

It is truly a privilege for me to have the opportunity to indulge in Chef Janice’s Chocolate Mooncakes, a standout in her collection of three exquisite mooncake selections this year. From the moment I laid eyes on the packaging, I was captivated by the thoughtful design—a striking combination of red and teal. The rich red exudes a sense of warmth and passion, symbolising the bold and intense flavours that await within. Meanwhile, the teal adds a layer of calm sophistication, lending a refined, elegant touch to the presentation. Together, these colours create a harmonious balance, making the entire packaging not only visually appealing but also a reflection of the artistry and care that has gone into crafting these mooncakes. The careful attention to detail in both the packaging and the product itself speaks volumes about the quality and thoughtfulness that Chef Janice has infused into this year’s collection.

Inside the elegantly designed bag, the mooncake is nestled in a striking red metal box, a visual treat that hints at the luxury and care put into the creation of these exquisite treats. The box itself is a work of art, featuring two tiers that house four distinct mooncakes, each with an outer crust crafted from premium quality dark chocolate and adorned with Janice Wong’s signature design.

These mooncakes are not just desserts; they are a testament to Chef Janice’s mastery of flavour and texture, with each variety offering a unique taste experience that has been thoughtfully curated.

 

 

Blue and White – Salted Caramel Cashew:

 

This mooncake combines the indulgent flavours of salted caramel and cashew, with a piece of chocolate cake submerged within the salted caramel and cashew nougat filling. The result is a rich and creamy bite that is perfectly balanced with a hint of saltiness from the caramel. This flavour is especially suited to pairing with a cup of tea, as the subtle saltiness and richness of the caramel are beautifully offset by the warmth and earthiness of a good brew.

 

 

Pink, Green, and White – Gula Lapis, Whiskey Old Fashioned:

 

As the name suggests, this mooncake is a layered masterpiece that brings together the aromatic flavours of pandan, the deep sweetness of gula Melaka, and the luxurious texture of marzipan. The layers of green pandan are interspersed with brown gula Melaka, creating a visually striking and flavour-rich experience. What sets this mooncake apart is its infusion with whiskey, which adds a sophisticated kick and a subtle spiciness that makes it an intriguing and adult choice. The pandan kaya aroma is enhanced by the whiskey, creating a complex and memorable taste that lingers on the palate.

Other than chocolate mooncakes, Chef Janice also created traditional mooncakes with a twist in flavour. For the baked version, they come with the following flavours

Snowskin Mooncakes

 

 

For the snowskin version, the mooncakes feature a delicate pastel colour palette and traditional Chinese embossing that resembles interlocking bamboo trees. They are available in four distinct flavours, each represented by a different hue:
